Just a quick thought to share. You know I write, but I also love to cook and thought I’d share a quick recipe. This is super easy to make, takes less than 15 minutes, and it fills you up with comfort. It’s especially good on cold days, but it works well during a busy week.
You’ll need instant rice, butter, broth, Ranch Style beans, spices, and a sausage ring (whatever kind you like – we prefer andouille).
Cut the sausage into quarter rings and brown in a skillet with a little olive oil. While that cooks, make the rice per package intructions, using broth instead of water, or bouillon powder in the water, in the microwave. When it”s done, heat the beans in the microwave.
To serve, put a layer of rice on each plate, top that with the sausage, then top that with the beans. Season with the Cajun spice you prefer, if at all. We use Tony Cachere’s.
If you have leftovers, don’t mix everything together. The gravy from the beans will completely soak into the rice and ruin the texture and flavor. This recipe is a good serving for two people, and a reasonable amount for three people.
